What matters is where the data is processed and stored, whether the vendor signs a DPA, and how they handle transfers out of the EU. A slick payments UX means nothing if legal vetoes it in review. I'd have your DPO or counsel define the non-negotiables before you demo anything. Are your contractors only in the EU, or a mix?
