You can create a Task or Board while changing the visibility to private . Then only people added to the board can view and edit.

Not sure why you want to hide stuff from members of the team. Be transparent. Everyone should know what everyone else is working on. One of the primary benefits of having a Scrum or Kanban board, including those in Trello, is visibility and transparency.
