I've been using MDaemon for 25 years, give or take. It's packed with useful features in addition to simple email, but it does this whilst still maintaining a small footprint and modest hardware/OS requirements. It's also very easy to manage, and its use of plain-text config files and a flat file message storage system makes it extremely customisable as well ... I can't think of anything I've not been able to achieve with it, even in some complex scenarios.
