EBS is the backbone of our storage. We run workloads which use the EBS volumes heavily across EKS, Databases and other services. The IOPS performance has improved drastically. Without a doubt, the best feature of EBS is the ability to add storage to a volume on the fly, without having to take anything down. Sure, we've had this ability with LVM on stand alone systems, if you've got the extra storage available, and on-prem fibre-channel connected (and iSCSI) storage farms allow similar capabilities, but with EBS in a cloud environment you don't have to worry about if you've got available storage unallocated...
