What is the best way to manage out-dated and unused files left over from updates that don't get cleaned up by system tools?
As Windows continues to roll out updates, there are unused files that continue to take up space and cause the size that the operating system occupies to grow.
You can use the windows disk cleanup utility.

How to stop automatic updates
i dont know :D
Well, I would recommend like this.
1. windows update is really useful for your computer such as bug fix, update new features, driver etc.
2. the purpose you buy windows license because you want to get update from microsoft.
3. if you experience the computer slow during update, you should change your computer hdd to ssd to make the performance better.
4. I still recommend for windows update, never turn it off.
Go to "Computer Configuration" > "Administrative Templates" > "Windows Components" > "Windows Update". Double-click "Configure Automatic Updates". Select "Disabled" in Configured Automatic Updates on the left, and click Apply and "OK" to disable the Windows automatic update feature.

Is it possible to only use Windows 10 defender and avoid 3rd party anti virus?
I am using Eset Node 32 endpoint security anti virus in addition to windows 10 defender (that is inbuilt antivirus)
Yes windows defender works perfectly
Windows Defender does help but to can work with 3rd party anti-virus. You can download free versions to avoid having to purchase anything. It would be recommended to do research on the top rated anti-virus programs prior to downloading any.
