Anything that requires structured content. That could be something from a blog to an e-commerce application running both web and mobile. At the end of the day Sanity is nothing more than a data lake that has an amazing GROQ syntax for querying.
GROQ (Graph-Relational Object Queries) is a declarative language designed to query collections of largely schema-less JSON documents. Its primary design goals are expressive filtering, joining of several documents into a single response, and shaping the response to fit the client application.

The current rate for an Author seat is $125 per month per author, billed annually at $1500 per author. They also have SME (Subject Matter Expert) seats that offer a pared-down view for reviews and contributions at $10 per month per SME, billed annually at $120 per SME. Then, you have an unlimited number of free Viewer seats for people who need to see only the content output.
