
We use LabVIEW for the data acquisition for USC's Rocket Propulsion Laboratory for a load cell, thermocouples, and pressure transducers. I like that LabVIEW can be easily integrated with national instruments (NI) hardware - namely DAQ cards that can be bought specifically for thermocouples and analog inputs. You can make your front panel very organized so you know exactly what your data is real-time. There is a learning curve for using LabVIEW, but as a graphical programming language it is not too difficult. There is also an abundance of online support and forums where I've had a lot of help.
