How well does MailChimp allow users to manage their subscriptions?
For example, let's say I run a pet store that offers 3 newsletters: one for dogs, one for cats, and one for birds. Is there an easy interface for allowing customers to add newsletters (if they get a new pet) or unsubscribe from newsletters (if a pet passes)?
Yes, Mailchimp works this way, but you need to configure the list the right. For example using multiple segments. Don't use multiple lists, that doesn't work very well if a subscriber is member of all lists and you create the same campaign for all these lists.
Mailchimp has a feature called "Groups" that allows contacts to be targeted based on their individual interests. Contacts can either select which groups fit their interests when they sign up, or via an "update your preferences" link in your emails at any time. When you send each newsletter, you'd just select the specific group(s) as the recipient.

It's super easy to setup a drip campaign (we call these autoresponders) based on a trigger. We have a number of triggers, but one you might be interested is subscription via a webform. When a person subscribes using such form their email is added to a configured list and an autoresponder triggers. Autoresponders can send a number of emails to subscriber spaced out in time.

Then create a DE (Data Extension) to enter the information of the subscribers to whom you will send the email template.
Through the content builder instead, you will be able to create your template.
Once you have created the DE and the Template that will contain all the information you need to develop an automation that will go to fill in this DE, this can be done through Automation Studio.
Once you have finished the development of the automaton and populated the DE, you proceed to the Journey that will allow you to merge all the developments done previously and test and conclude the automated communication process
