Overall openJDK8 is very stable with minor issues. It is faster, with a good amount of new features (though with Java11 and above, we get even more of them). And with Ubuntu (or any other Debian distribution), Java 8 (or any other Java version for that matter), ease of installation and configuration along with faster application deployments are some major advantages.
