Algolia just works well. I've used it in personal projects and setting up fast, typo-tolerant search was quick, with results that feel instant as you type. The dashboard makes it easy to tweak relevance and ranking, and the client libraries and InstantSearch UI components saved me a lot of time compared to building search myself.
