I'm not 100% clear on your requirement to book meetings with multiple calendars, however we are rolling out some exciting new features in 2023 which will hopefully address your this.
I've used YouCanBookMe at two different higher ed institutions and have found it easy to set up with plenty of options for customization. For those booking appointments, it's straightforward and students haven't ever had any difficulties with it.
