The Theo Consumption report helps identify variances caused by recipe errors, and not all inventory management systems have this report readily available.

Backdating should be allowed up to the last stock count date. It should also be possible to create backdated stock counts in cases where a stock count wasn’t created on the closing night, even though the count was actually done.
