As a flexible IDE for development, and for text-editing and in combination with excel to make it very easy to manipulate CSV's, etc.

Text editing. Any kind of text editing. Hex editing, regular expression(s) find/replace, XML formatting, and any programming language. Find in files. UltraEdit is like a Swiss Army Knife of text editing. It does everything you want a text editor to do.
