A process checklist is essentially a bulleted or numbered list of things you need to complete to achieve a business task. Sometimes things go in a step-by-step order...sometimes there are "if/then" statements where you need to decide on the next item based off a prior item; it's all about gathering the information you need to complete your checklist/task or business object. 

In short, it's a fancy list to make sure you can get something done with nothing slipping through the cracks.
