Here are some ways to make Outlook more like Gmail:

Use the conversation view: Gmail uses a conversation view, which shows all of the emails in a conversation together. Outlook also has a conversation view, but it is not enabled by default. To enable it, go to File > Options > Mail > View and select the Conversations check box.
Use keyboard shortcuts: Gmail has a number of keyboard shortcuts that can help you to be more productive. Outlook also has keyboard shortcuts, but they are not as well-known. To learn more about Outlook's keyboard shortcuts, you can visit the Microsoft website.
Use add-ins: Gmail has a number of add-ins that can add new features and functionality. Outlook also has add-ins, but the selection is not as large. To find add-ins for Outlook, you can visit the Microsoft AppSource website.

Change the theme: Gmail allows you to change the theme of the email client. Outlook also allows you to change the theme, but the selection is not as large. To change the theme in Outlook, go to File > Options > Mail > Display and select the theme you want to use.
