Version control is turned on by default in SharePoint Online and can be turned on or off or configured as follows:

1) Create major versions
 Example: 1, 2, 3, 4

2) Create major and minor (draft) versions
 Example: 1.0, 1.1, 1.2, 2.0

Version history can be viewed at the item (documents, project files, etc) level.
