Does anyone know the easiest way to do this? I'm making our company logo and we need to crop it.

If you have a recent version of Illustrator, it's possible you have a "Crop Image" button available, without needing to make any extra tool selection effort. With the image selected, just look at the top of your toolbars & you can select Crop Image. Alternatively, open the Object menu & scroll down to select Crop Image. From there it gives you the boundaries to drag to whatever new dimensions you prefer. Best of luck!
