Hi Lexi! Once a proposal has been signed, we lock down all edits to ensure the document remains legally binding, so there isn't a way to manually mark a proposal as 'won'. We recommend creating your proposals with only the necessary signatures so you don't run into this issue (though we completely understand that it may happen from time to time).
